Leggen of liggen...de vloer

Maandag even stoom afgeblazen in een mail naar Larein en eigenlijk vond ik wel dat dit integraal geblogged kon worden...dus bij deze...met foto's;

Nou, het legt bijna...
Zaterdag de kast uit elkaar, al onze kleding ligt in enorme bergen op zolder verspreid over logeerbed, kisten en stapels. Ik trok vanmorgen iets khaki uit de stapel waarvan ik dacht dat het een broek was, goed gegokt, om dat een half uur later nog eens te doen met mijn slaperige hoofd (dacht dat ik nog geen broek had)...bleek een niet-voor-niks-nooit-gedragen blouse te zijn, ook goed... Dus zie ik er vandaag uit als een wederopstanding van Steve Irwin, the Crocodile hunter!!!

overloopDit weekend nog gauw even wat plintjes geschilderd boven..nog "even" schoonzus en zwager te eten gehad (ik zag de bui al hangen en stelde heel verstandig voor om uit eten te gaan, antwoord: nou nee joh, dan maak je toch gewoon iets wat je makkelijk vindt? Mijn assertiviteit ging nog niet zover dat ik dan zeg: uit eten dus). Zondag nog even het een en ander in de grondverf beneden en toch maar even de trap zijkanten in de 2e laag lak om vervolgens alle verf van mezelf weg te krabben om gepikt en gestoven naar wederom een verjaardag te gaan.....
kamer W&TEn maandag kwam de laminaatmeneer, vóór die tijd inmiddels ons beddengoed in de badkamer geparkeerd incl. matrassen, de nachtkastjes in de wc, kortom dolle boel hier. Lamimeneer houdt van opschieten dus gisteravond kon onze kamer, en die van de jongens alweer grotendeels in orde gebracht worden, ware het niet dat de plintjes niet meegekomen zijn en dat alles dus nog een halve meter van de muur geparkeerd staat.

En, dat waren ze er even vergeten bij te zeggen, die zooi geeft een troep! Op onze kamer is gezaagd....en ik had de gordijnen niet weggehaald... Dus heb ik gisteravond eerst gestofzuigd overal, ja, ook de plinten én de muren én de gordijnen, toen gedweild, gordijnen eraf en alles wat op de werkkamer nog stond verhuisd naar de "affe" kamers en iedereen schoon beddegoed en de kinderen van en naar training.....de gordijnen van de werkkamer eraf en weer bij ons erop. En toen kwam Echtgenoot thuis ..... kindjes inmiddels gedoucht, in bed, kamers aan kant en schoon, lege kamer klaar om gelegd te worden, keuken opgeruimd....Twee geweldige broden gebakken uit Maggie en cinnamon rolls van King Arthur........ Zegt 'ie:
"de groeven lopen niet door van de overloop met de kamer van de jongens, moet je morgen even zeggen tegen die man dat hij het over doet"
Juist ja.
Dacht het niet.
Heb je al gegeten? (nou, een mars, een gevulde koek, en een appel)
Mooi, dat is dus een ja.
Stik!

En toen hebben we eendrachtig even de onderdelen van de kast nog van de ene kamer naar de andere gesleept. In een goed huwelijk weet je wanneer je je mond moet houden toch? Heb wel een schaal toast op tafel gezet met blauwschimmel en brie. En in mijn eentje een doos After Eight leeggevroten. Nah, hij mocht er ook twee.
Ik ga strijken.

Naschrift 1: Zoals Larein al opmerkte: hij had gelijk! Ook nog! Had ik inderdaad op moeten letten. Had ik me nog zó voorgenomen... ::Baking laat deemoedig de kin op de borst zakken en geeft zichzelf een denkbeeldige schop onder haar achterwerk::

Naschrift 2: Dit speelde zich allemaal maandag af en gisterochtend voorzichtig lamimeneer gemeld dat het toch wel erg jammer was dat de naden niet door liepen, en oftie misschien de andere kamer wél...? Reden (pfieuw, er was een Reden!) Binnenmuur loopt scheef en hij heeft de buitenmuur aangehouden om te beginnen met leggen. Natuurlijk, er zal eens een keer iets recht zijn in dit huis. Niet! Nooit! Vervolgens heeft hij gisteren vreselijk zijn best gedaan op de plintjes....weet jij hoeveel hoekjes er zijn in dit huis? Nou...hij inmiddels wel, en ze zijn errug mooi geworden. Compliment!

Rice pudding pie - Apple custard pie

Another "vlaai" and since I promised you'll find the recipe below:

Regular: (Rich:)
250 gr pastry flour (250 gr pastry flour)

1 ½ ts yeast (1 1/2 ts yeast)
30 gr margarine (75 gr butter)
30 gr sugar (
30 gr muscovado sugar)
½ egg (
1 egg)
75 ml milk (50 ml milk)
pinch of salt (pinch of salt)

Combine and knead till a soft and supple doughball, cover and let rise for approx. 1 hr. or until almost doubled in bulk. (slow riser due to amount of butter, will not exactly double). Pat down and form a tight ball, roll into a circle, slightly larger than the scale of your pie plate.
If you like, you could crimp or flute the edges, excess dough can be rolled off with your dough roller. Cover with plastic and let rise for another hour.
In the meantime you can make your choice of filling. This time I made an apple-custard filling, for my birthday I made the traditional rice-pudding filling, equally tasty! Use your imagination: think cherries, apple crumble, peach-blueberries, plums…or top the filling of your choice with crumbled meringue and whipped cream!
Rice-pudding*:
100 gr dessert rice or round grain
1 liter milk
100 gr sugar
10 gr flour
2 eggs (separated)
1 egg
20 gr sugar

In a medium heavy bottomed saucepan, combine milk and rice and bring to a boil over high heat. Reduce to low and add sugar, simmer until rice is very tender, stirring frequently . (approx. 15-25 minutes depending on rice). In a separate bowl stir a couple of spoonfuls of the mixture with the flour, pour into the saucepan stir briskly, let cook to thicken. Let this mixture cool down to lukewarm. At this point you could stir in ½ ts vanilla extract. Whisk the egg yolks foamy and add to the mixture. Beat egg whites till stiff peaks form, with a metal spoon carefully fold the egg whites in.
Prick the dough with a fork and pour the mixture in, spread evenly. Beat the last egg with the sugar till almost white and foamy, pour evenly over rice-mixture.
Bake immediately on 175C for approx. 25 minutes (convection oven) till golden brown on top. For a “Christoffel vlaai” you can top the vlaai with whipped cream and chocolate flakes.
The apple-custard filling is as easy as it sounds: the pie dough is filled with custard and topped with thin slices of apple. Sprinkle with cinnamon-sugar mixture and bake for 20 minutes on 175C (convection oven).

*Note: Despite the “pudding” in the name the rice pudding you are looking for here is a creamy soft textured kind, almost like thick custard. In the Netherlands we can buy a “dessert” type of rice which is round-grained and parboiled. Please follow the directions of the recipe you are familiar with and aim for a custard like consistency.

Pasta maken (2)

Adem in......adem uit.....
Joepie ik heb een pasta machine die past op mijn Kenwood standmixer!
Nou, dat klinkt niet gek he?

Leek me zo leuk, mijn eigen pasta maken, en dan niet van die vellen die je kunt snijden in slierten maar van die leuke vormpjes. Kijk, ik dacht zo: die vellen, nah, die kan ik zelf ook wel maken, en snijden lukt ook nog wel (dus niet maar dat doet er verder niet toe) maar die vormpjes dat red je noooooit. Dus van de categorie pasta-apparaten doet u mij maar zo'n uit-druk-ding. Kunnen we tagliatelle maken, holle dikke spaghetti, dunne
spaghetti, geribbelde elleboogjes, smalle lasagnareepjes.... Helemaal geweldig! En dat allemaal in een mum van tijd!
Heb ik hem voor mijn verjaardag gekregen, ik helemaal gelukkig. So far so good. Hartstikke druk dus nog geen tijd gehad, maar gisteren mezelf een vrije dag gegeven en de eerste lading geprobeerd. En de tweede.. De derde..
Wat 'ie doet in een mum van tijd? Een ongegeneerde puinhoop maken van je aanrecht, je vloer, je complete keuken. Maar dat kon ik zelf al. In een mum van tijd. Wat ie niet doet? Pasta maken!!
Maar we hebben gisteren pasta gegeten. Verplicht. Was nog te weinig ook. Worstenbroodje toe. En ik hou helemaal niet van worstebroodjes.

Dus vandaag...je voelt hem al komen, ik ben redelijk koppig, een nieuwe poging. Spinazie pasta. Want dat was ook één van die dingen die ik al helemaal voor me zag. Allemaal leuke smaakjes toevoegen, ik had zelfs al iets bedacht met kaneel en suiker, of chocola...
Dat overkomt me overigens regelmatig, bij projecten. Dan zie ik het eindresultaat al helemaal voor me maar vergeet ik voor het gemak de tussenliggende frustraties stappen. Och, zo hebben we allemaal wat, toch? Toch? Zeg nou ja.
Ten eerste krijg ik het deeg niet goed. Ten tweede heb ik een ernstig gebrek aan een extra paar handen (is in mijn leven een terugkerend probleem, begonnen met geboorte tweeling), ten derde heb ik het hele net afgezocht naar recepten en ervaringen, kom ik er nu achter dat zelfs op het immer juichende
Kitchen Aid forum men op zijn zachtst gezegd niet enthousiast is over dit apparaat. (KA heeft vrijwel exact dezelfde pasta-molen).
Zucht
Wat nu? Zou de Harense Smid hem nog terug willen hebben? Inclusief vastgekoekte spinaziestukjes? En dat ik hem dan misschien om kan ruilen voor een
pasta-roller? Zou dat dan wel werken? Dáár zijn ze wel enthousiast over op het net. Of gaan jullie me helpen met hét recept, dat het dan wel lukt. En ik weer rustig kan slapen enzo? Want weet je, als het werkt heb je dus in een mum van tijd pasta....is toch leuk. Iemand ervaring? Moet het deeg soepel, of juist niet?

Have a break, make some pasta....

My dear husband surprised me with a pasta extruder for my birthday (number one on my wishlist!). And today I took a break from painting and set my mind to pasta making. I mean: how hard can it be? A little distraction is good for mind, soul and -aching- body. Well a couple of hours and a few batches of dough later I am happy to announce: it is harder than you think. Bear with me while I walk you through a series of mishaps and a little success.

First attempt: egg pasta with a little tomato puree, making rigatoni. Oh wow, do you think I should cut it? And with what? That's what they don't tell you in the manual.... scissors or knife? No idea..sticky stuff.
The dough is very crumbly, let's try another disc. The tagliatelli one...



Here we go, this looks for real!
Dough is still very dry, and the machine is struggling....is getting a bit warm to the touch, this sure does not look like any dough I know.
Pasta's looking good though. Do you think I should knead for a bit, add a little tomato-puree? Make the dough come together?
Okay, that was where all things started to go wrong! So the beautiful nest of tagliatelle above was the only one (yes, 1!) coming out of that batch before making a mess and trashing it.

Ultimately I made three batches of dough, first one (ap flour/eggs/ water) was almost perfect but ruined by adding too much liquid. Second (ap flour/olive oil/water) was again too wet and elastic and made all my strands sticky (you know the Roxy Music song? I swear I could hear them sing "come on, come on, let's stick together"). The third turned out not too bad (bread flour/water/olive oil) and I even managed to make some semi real rigatoni with it.

I am not prepared to give you any recipes yet, I think I know now the dough has to be coarse breadcrumb like, only mixed for a very short time (think half minutes on speed 2 or 3) just so you can make loose little balls to feed your machine. If you have any suggestions....please help! And..to make matters more complicated, extrusion pasta dough seems to be different from roller pasta dough...ahum....help?

It's a miracle!

For the first time in ah.. two weeks? I cooked a full meal tonight. Not that we haven't eaten a proper dinner since, but I must say this felt real good. May or may not have something to do with wearing real clothes all day today, not the paint-stained jeans and scuffed shoes, even my hands looked reasonably clean today (hands, not talking nails here). I painted all the walls and they are finished yay!, I even did the kitchen. All that is left is the panelling in the hallway and near the stairs... Tomorrow is another day okay?
Back to cooking, we had old fashioned vegetable soup, a cauliflower and curry ovendish with ground beef, potatoes and some apple and a miracle pie for dessert, thanks to surfing the net for 5 minutes. Reading the directions I wasn't sure it was going to work but it did!
This is what you do:

In a large bowl mix:
1/2 cup to 1 cup sugar
1/4 cup soft but not melted margarine (yes I know, you can substitute butter)
4 eggs
1/2 cup flour
2 cups milk (I used low fat)
1 cup coconut flakes
1/4 ts salt
1/2 ts baking powder
1 ts vanilla (I used 1/2 lemon, and 1/2 rum)

Beat vigorously, pour in a baking dish (pie pan) and bake on 350F for 50-60 minutes. Cakey bottom, crusty coconut crust and pudding inbetween. Et voilá.....comfort food!! I would like to give credit but this recipe is all over the net so... Nowhere near refined but really good, really comforting, just what you sometimes need when your house is a shambles and you need matchsticks to keep your eyes open, I assure you after this you only want your bed with clean sheets, a cup of tea and a good novel!

Carrot cake, Lime-bavaroise cake and "Rijstevlaai"


Almost forgot to show you the cakes I made for my birthday. I think I did a fairly reasonable job for a not so sweet-toothed girl. The carrotcake was served on Friday together with some mascarpone-orange frosting. As carrotcake is an unusual feature here in Holland the reactions were ah, let's say, hesitant... First they made sure I wasn't joking, (there is an old joke about this rabbit that comes to the bakery on three consecutive days and asks for carrotcake which the baker obviously doesn't have and then the fourth day the baker decides to make a carrotcake and proudly presents the rabbit the result, after which the rabbit says: Gross! The funny part is of course in the bit I can't write: whenever the rabbit speaks you make this rabbit teeth plus accent....) and as all the seven ladies present have children and thus know of the joke, they were a bit weary, viewed the cake some more, agreed to try a small piece and then asked if there were really carrots used!
The next day I finished a cake with raspberry bavaroise filling and decided to use lime-bavaroise to frost. I wasn't too sure that it would turn out the way it did (and hold up against the weather), so early morning I decided to bake another one, this time a "vlaai" which is a type of pie, originating from the Dutch province of Limburg. Invented in Weert, (after baking the daily bread the women in the neighbourhood took their home made vlaai to the bakery to make use of the still warm ovens) it is nowadays available in all of the Netherlands. A vlaai (pronounce "fly") consists of a yeasted dough flat bottom, edged upwards at the end. It is filled with fruits, such as apple, apricot, rice or cherries and then baked, sometimes topped with sugar or whipped cream and chocolate or merinque. This is a "Rijstevlaai" (Rice pudding pie) a classic filling with rice cooked in milk, enriched with egg yolks and sugar.

Blogging By Mail package arrived!

I had a truly great birthday last Saturday. Not only were we able to sit outside after weeks of real autumny weather, I got all these fabulous presents (which you will see eventually represented here...or the results) and to top it all off my bbm package arrived!

USPS was kind enough to inform me there was a package coming from
Mariko over at Supereggplant, so anticipation was building (all the way from the States, and a Japanese sounding name...teeehee!) and Saturday the postman had no chance to ring the doorbell, upon arriving he was stormed by all children in the house and one elderly lady yelling: Yay, that's mine!
I restrained myself and managed to take a photo of the package in it's original state. (Phew, imagine the forces battling within).
Deftly opened the envelope and one by one all these lovely items presented themselves. Cheers and shrieks of joy all around. Mom, look that's candy! (slap on hands when twins simultaneously try to grab sours and Hello Kitty candy), oh wow mom, can I bring one of those ice-tea things to school please..(Floris, already planning to impress classmates).


Let me show you from top left to bottom right; macaroni&cheese, lemony variety of sweets, coffee flavoured candy (yum!), green tea noodles (yippee!), Hello Kitty gummies, Jif peanutbutter (husband gets nostalgic), Ice-tea sachets, roasted green tea bags, and ice breakers and underneath a piece of fabric (ooh what will I make? not sure yet, maybe a teacosy or an apron or..).

Cheers!

Yesterday night I was checking the Dutch breadbaking forum and found a link to Zoubida's blog called: Kitchen Culture. Besides unbelievably intricate chocolates and moroccan inspired recipes there was this little recipe that caught my eye... Although it was already late and I had spent the better half of the day in the kitchen, I mentally checked my pantry, figured I had all the necessary ingredients...and in a minute I was whisking away on the chocolate syrup and home-made cream of whiskey. Zoubida cautioned in her recipe to let the cream stand chilled for 24 hrs, I couldn't resist sampling...and it's good! I used whiskey, and real real strong coffee. Next time I will try to tweak it a little as this was a tad too sweet for my taste.
Other than that, this morning at breakfast the kids had their milk infused with the chocolate syrup and they were very happy too! Thank you Zoubida!
This morning (morning, yes!) I introduced the "annual" coffee-club to very tiny, because of the hour, not because I wouldn't share, glasses of whiskey cream. Cheers all around the table. (Angelika, don't worry, I do have regular chat-sessions over coffee with friends, but this was a special once-a-year kind of kaffee und kuchen...) ;-)

And I love the way it's walking around, raising it's beautiful head, last year we discovered it beside the house, this year against the wall at the back of our house. I can't remember the name but I love every bit, the purple flowers, the bells and even when the flowers are gone, there is this deep purple bud left.

Lazy Sundays..

Sunday...
Sleeping in, long morning coffee sessions, kids in pyjama's, reading all pages of Saturdays paper (no sunday papers here in Holland), breakfast slowly maturing in brunch, walk on the beach/woods, visiting friends for drinks and chats, watching some tv, boring serene long hours...
No way!! Look at this and remind me please, what does Sunday look like? No preppy clothes, no make-up, no soft boiled eggs for breakfast, no papers, yes for the bored kids. Today we were ripping out the carpet, tearing off wallpaper, attacking the steps with hair dryer and stopping knife, sponging the walls with warm soapy water to get rid of the last wall paper and sanding, sanding, sanding. I. Hate. Carpet. GLUE!!
I forgot to take a "before" photo but here you can see a detail in the top left corner. That was the staircase...before. All dark brown you see here was once covered in -once- beautiful sand/corn coloured carpet. The walls were wall papered in the same shade. But what the heck was I thinking with three boys (and all their friends)? Yep. I was not. Thinking I mean. Soooooo...the plan is......covering the steps of the stairs and the first floor (or is that the second floor in US-speak? confusing!) with wood ("vintage oak" is what it is called). The sides of the steps needs painting and we uncovered the panelling on the walls and that should be painted too. And the handrail but that is something the Husband is not aware of....yet.
Anyways...I took a 20 minute break and hurried some breakfast raisin muffins in the oven. I figured we needed something warm and sweet. Recipe will follow some time later..

My favourite things...

Is what Maria sings in the Sound of Music, but we are talking food here and besides the schnitzels and apfel strudel there are so many more things that I favour...
The BBC poll "50 Things to Eat Before You Die", inspired Melissa at The Traveler’s Lunchbox to start a meme-like challenge called "5 Things to Eat Before You Die". Tana at My Kitchen In Half Cups tagged me and I wasn’t sure if I could participate because I don't reckon myself a for real foodie, although when you read this post (don't forget the comments) you might think I qualify....a lot! Besides, qualified or not, it is a fun game. It turns out that thinking of my favourite things consist indeed of wonderful food but also I found that almost all of it had an extra quality added, be it surroundings, company or memories. I can only say; no matter how ultra-exclusive your food, it is who you are, where and with whom you are that makes food memorable.


My 5 things to eat…

1. the lobster in the topfloor restaurant in Nairobi, first night in Africa, the lights of nighttime Nairobi through the windows and lobster....

2. clam chowder in Monterey, 17 years ago, first vacation in the States, walking the pier, listening to the sounds of sealions ("they are playing a tape...no, there they are!) Ordering a bowl of clam chowder and with the first comforting delicious spoonfulls we saw otters playing in the waves....
3. the fries and croquets my grandmother made from scratch especially for me and my sister when we were kids. In a small old battered pan on her stove.

4. the wild mushroom filled ravioli with a delicious basil oil dressing one of our youngest sons had on Lago Maggiore on occasion of my husbands birthday. We were out on the terrace, under the trees, overlooking the lake and the last rays of the sun were playing with the white table linen. Our son made a point of choosing something from the menu he never had before and he loved every bite of it. He insisted that I should taste as well and was so proud he had made the "right" choice.

5. Cheese! There is always a cheese that makes a perfect companion for your fresh baked loaf of bread, your pastas, toast, fruit, wine...

And I’m tagging Lindy, Ashleigh, and Monisha, I hope they don't mind to play along and send their five things to Melissa. I’ve been back to the BBC list and found that I've tried almost all of it except Moreton Bay Bugs,
Barramundi, and Haggis and to be honest.....I think I'll pass on the bugs and the haggis!

Kippenhok, over tafelmanieren en zolders...

Het probleem; er zijn in dit kippenhok teveel hanen en te weinig kippen. Dat resulteert in een grote hoeveelheid vrij rondvliegend testosteron. Denk ik. Wat weer gevolgd wordt door haantjesgedrag. Wat zich dus uit in elkaar vliegen afvangen, wie de beste graantjes heeft, wie minder of meer graan krijgt, op de hoogste stok kan zitten, wie het best kan vliegen, de mooiste hanekam heeft, het hardst kan kukelen, en vooral ook heel hard kakelen als één van de andere haantjes zijn veren gewassen krijgt van Moeder Overste Kloek die naarstig haar best doet de vrede te bewaren en de haantjes klaar te stomen voor de Boze Buitenwereld. Dit staaltje faunabeheer is het best te observeren aan tafel.

Heel lang geleden, in een kippenhok hier heel ver vandaan, leefden ooit drie hanekuikens die keurige tafelmanieren hadden, en met elkaar en M.O. Kloek gezellige tafelconversaties voerden. Heel lang geleden. M.O. Kloek weet het nog goed. MO Kloek heeft een beetje moeite met loslaten.

Het voedsel ter tafel is al minstens 4 keer voorbij gekomen. In aanschaf, tijdens het opruimen, het schoonmaken, het koken en als het in meer of minder aantrekkelijke vorm ter tafel komt. M.O. Kloek heeft geen behoefte om afscheid te nemen vlak voordat het verteerd gaat worden. Dus roept ze regelmatig dat we niet praten met volle snavel, niet kauwen met de snavel open, dat de vork naar de snavel moet en niet andersom. Gelukkig hebben de kuikens het gedrag een beetje verdeeld, dat wel. Ieder heeft een andere onhebbelijkheid. Een uitgelezen gelegenheid om eens smakelijk te lachen om de ander en luidkeels steun te betuigen aan de Kloek als een ander op zijn veren krijgt.
Toevallig was gisteravond de Opperhaan aanwezig tijdens de maaltijd, en om een einde te maken aan het gestechel riep hij op ernstige toon met zware stem:
Wie zonder Zonde is, werpe de eerste steen.” (Nog even en hij eist een plek aan het hoofd der tafel en komt op zondag binnen om het vlees te snijden).
