I baked another one using a pie plate hence the different shape, originally a vlaai would be baked in a very large shallow and scalloped pan. And when I sat down tonight to write up the recipe I thought hey... didn't I do so already? Some time ago? I think I did!

The secret to a true rice pudding pie is the filling of soft creamy rice, flavoured with vanilla (although cardamom is really nice as well) and the finishing touch is the golden layer on top; consisting of an egg combined with sugar and whisked until very pale coloured, this is poured over the rice pudding and then baked.
