Moroccan Purim bread


This is my Easter egg surprise bread ready for proofing and it's a winner! It's really fun to bake and not difficult at all! Next time I will use colored eggs to make it even more fun. Traditionally you'll serve this "Chubzeh di Purim" for breakfast with the egg peeled and mashed with a fork.. I thought that was an odd combination as the bread is flavoured with anise, ground almonds, a few raisins and sesame seeds but the result is surprisingly yummy!
Next time I'll give it a little less oventime, cause mine came out a little too dark. Recipe is from Maggie Glezer's "A Blessing of Bread"

Pasen!

Zoals ik gisteravond al schreef, ik ben er nog...een beetje. Pfff beetje rare week achter de rug. Niet zo heel veel tijd om in de keuken te staan en even totaal inspiratie-loos. Op zulke momenten moet ik dus ook niet gaan rondzwerven bij andere (food)-blogs want dan zakt de moed je helemaal in de schoenen, tjonge wat maken die mensen allemaal mooie en lekkere dingen, ze schijnen er toch ook nog een leven naast te hebben toch?
Ik denk dat ik gewoon een beetje versnipperd bezig ben, of nee, we noemen het multi-tasking, dat klinkt al een stuk beter. Niemand weet waar je het over hebt en kan alleen maar in stille bewondering ooooh roepen (en zich in stilte afvragen: huh?).
Maar goed, de broodhaantjes zijn gebakken, de paasstol is klaar, we hebben wederom geen boterlammetje, (vergeet altijd dat houten geval in het water te leggen, tja multi-tasking wil niet altijd zeggen vooruit denken) ook geen echte trouwens voor het Paasdiner, Echtgenoot is voor het tweede achtereenvolgende jaar op het laatste moment op zoek geweest naar verstop-eitjes. Daar snap ik overigens niets van, je wordt vanaf half februari doodgegooid met die dingen en de dag voor Pasen is niets meer te vinden! Je maakt mij niet wijs dat ze allemaal verkocht zijn, ik verdenk Jamin ervan dat ze een soort Bermuda-driehoek voor seizoensartikelen zijn.
Nog even iets anders, weet iemand überhaupt waarom Pasen verworden is tot een soort midjaarlijkse Kerst? Pasen is voor mij ontbijt, eitjes, lekkere broodjes of nou ja vooruit, iets brunch-achtigs met iets warms maar sinds kort dienen wij ook vooral Paasdiners gaan maken á la Kerst? Volgens mij heb ik iets gemist!

SSD 6


Had a very busy week, lot of familybusiness to attend to, bit tired, bit overwhelmed by all the wonderful photos and recipes I've seen in blogosphere, all the efforts made.... Couldn't think of anything worthwile to add.
Besides all that the annual schooltrip was planned this week and I have been in the Efteling all day long with 10 kids in tow, each with their own set of wishes (scratch wishes - make that demands). You would have thought 2 adults and 10 kids would do? Well ...... barely!

To make things worse, my carefully built starter seemed to have given up on me, but I coaxed it back to life again and baked my first bread with it.
Here are the results and, alas, I am not entirely satisfied, it's been a while since I have baked these kind of flat pancake-like breads. The dough was very wet and I should have known better, should have trusted my instincts and add more flour than I already did....

Saturday night dinner was home-made soup (tomato this time) and these small filled breadrolls.

Filling consisted of crumbled feta-cheese, fresh herbs, an egg and grated matured Gouda cheese, p&s.

I had some filling left, and as you can see in this picture I think I should have used it all.

Uiltje knappen....

Dit uiltje zat dus rustig op een tak zondag-ochtend.
Eigenlijk vinden we het een beetje "ons" uiltje omdat we hem 's nachts altijd horen. Het heeft even geduurd voordat we wisten dat het geluid van een uiltje kwam. 's Winters horen we hem bijna niet maar zo rond deze tijd begint hij zijn duikvluchten rond ons huis weer. Leuk!

SSD 5


Tuesday morning: I'm happy, the starter has tripled in 24 hrs as you can see in the picture. It is very gooey. I repeated the refreshment (same amounts as before).

Wednesday morning: "starter should be getting stronger" I am not sure how you can see that but it is definitely alive and bubbling and has again tripled in 24 hrs. Maggie also mentions that it should be "more fragrant" Hmm, not very different so far.

Wednesday evening: Beware! I was in a rythm of morning feedings until this one popped up!
"It should have tripled in 8 hours" It sure did, too bad I had to wait till midnight...
(Nope, no pictures here, hehehe) Refreshment changes here:
15 gr (1 tbs) starter - 30 gr (2tbs water) - 50 gr (1/3 cup) bread flour!

Thursday morning: Ready for final refreshment:
10 gr (1.1/2 ts) starter, 30 gr (2 tbs) water - 50 gr (1/3 cup) bread flour!

Thursday evening: The starter should be ready for use now or to be refreshed once more and then immediately stored in the refrigerator.

For a completed starter Maggie tells us the following:
makes: 90 gr starter (rounded 1/3 cup) starter, enough to leaven about 450 gr(3.1/3 cups) flour in the final dough.

refreshment for a completed sourdough starter:
10 gr (1.1/2 ts) fully fermented starter
30 gr (2 tbs) water
50 gr (1/3 cup) bread flour

"This completed stiff starter needs to be refreshed only every 12 hrs. Also to be used to refresh a refrigerated starter after it has fully fermented and started to deflate. If the following starter does not quadruple in volume in 8 hrs or less, refresh again until it does."

But......now she got me confused! Does this mean my starter is ready for baking tonight? Which means I have to bake a bread in the middle of the night? Or should I refresh tonight and bake tomorrow morning? Someone please help? Pretty please with sugar on top?

Afspraakje

Zullen we een afspraakje maken?
Stel hè, je wordt ’s morgens wakker en je denkt: Ik ga vandaag zó ontzéttend poetsen!!
Normaal gesproken is die bui over tegen de tijd dat je gedoucht en de kinderen naar school hebt, maar laten we even aannemen dat die bui hardnekkig blijft hangen.
Dan hijs je jezelf in een poetsvriendelijke outfit, maar wel nog een béétje het aanzien waard, je weet tenslotte maar nooit wie er aan de bel komt hangen. Okee, dat wordt dus stretch spijkerbroek, makkelijke schoenen, dat leuke t-shirtje dat precies dezelfde kleur heeft als dat fleece-vest (het is tenslotte nog fris ’s morgens en dat kan makkelijk uit en aan).
Goed.
Tot zover alles prima. (Stop met grijnzen Mam!)
Emmer met sop, keuken schoonmaken. Emmer met ammoniawater. Vloer eetkamer boenen incl. plinten en horizontale vlakken. Vest uit want warm.
Schone emmer sop.
Och, gelijk even een scheutje bleekwater in het afvoerputje van de gootsteen, kan dat gelijk even intrekken, wordt het zo lekker makkelijk schoon van. Goh, dekseltje schiet los, even aandrukken.

In de la van de kinderen rommelen op zoek naar een viltstift die dezelfde kleur heeft als het t-shirtje…….
Zullen we afspreken dat we volgende keer gewoon oude meuk aandoen indien last van poetsbui? Doet er niet toe wie er op die bel drukt? Afgesproken?
Okee, dat is dan duidelijk.

Die Ikea toch... :-D

Kijk nou toch eens wat ik vond! Een digitale kernthermometer annex kookwekker zomaar voor een Ikea-prijsje (6,95 !). En ze hebben hem nog "Fantast(isch)" genoemd ook. Ik was van plan om dit bijtijds te melden aan jullie, maar blijkbaar was ik gisteren niet de enige die rondrende in dat geel-blauwe gevaarte... Larein had hem ook gespot én gekocht én wist het ook al te melden bij Bakkerswereld...
Te laat Baking! Niet verwonderlijk aangezien ik de hele week al het idee heb achter mezelf aan te rennen. Als je bedenkt dat ik gisteravond om 00.24 uur mijn starter stond te refreshen, achterloop met mijn SSD en totaal geen benul heb wat en hoe en vooral wannéér ik nu verder moet met mijn vrijwel "fully fermented" prutje...
Nou ja, dit allemaal tussen het luizenpluizen door (ho wacht even; niet thuis maar op school gelukkig), de boodschappen, de schaatsles, de zoektocht naar schaatsen -April? Schaatsen? Wie is er nou gek?-
Enfin, verder dan uit dat rottige plasticje is die thermometer nog niet gekomen maar dat gaat vast binnenkort gebeuren. Tjonge, ben ik toch de heuse bezitter van een ding aan een draadje, het ene eindje in je brood, het andere eindje aan die wekker met magneet en hoppa, je kunt buiten je oven de temperatuur aflezen die je brood binnenin heeft! Had ik al gezegd dat 'ie ook in Fahrenheit én in Celcius meet?
De tranen staan in mijn ogen, wat een geweldig ding....nou eerst een batterij opzoeken en kijken wat ik met die starter aanmoet, en de tandarts verzetten, techniekronde draaien en mijn huis kuisen en de was opvouwen en ... en ... pffff ... lijstje maken? En een pleister opzoeken voor mijn vinger...je hébt van die verpakkingen.....

Eating on a shoestring...

(I think I just invented some idiom of my own...) Are you on a budget? Would you like to spent less on a meal and eat well at the same time? Are you rooting around in your fridge and pantry at the end of the month trying to assemble a worthy meal? Well, foodbloggers around the world have the solution for you!

Lindy from Toast has introduced a one-time event that she has aptly named Something out of Nothing. You can read her introduction here and finally the round-up which has resulted in a wealth (yep!) of recipes. All these recipes are fit, as Lindy says: "for low funds, empty cupboards, and hard times". Great idea!

PS: picture of Stringozzi Pasta. Narrow Umbrian pasta ribbons that are thicker than spaghetti and look similar to shoestrings. The thickness of this pasta provides for a chewier texture.

The Sourdough Starter Diary 4

Mondaymorning
No pictures today, for there is no change in appearance. Today is another refreshment day. 30 grams of starter refreshed with 30 gr. water and 50 gr. flour.
I used another 30 gr of the starter and refreshed the same way and I plan to use it for a bread tomorrow while the original starter will still be fermenting and maturing

Memories and cushions

Don't know where to start...Scanning the IMBB's agenda of upcoming events I saw this announcement about Lanang Pinoy nr 8, which is hosted by Edible Experiments, about memories of your childhood and the way you were introduced to kitchenthings or the ways in which you yourself let children participate in your everyday cooking. As my grandmother is still in my thoughts in my day-to-day life, I immediately thought of her and our sessions in the kitchen when I was little and entered this post. Later on we would exchange stories over the phone and she always enjoyed being part of our lives that way, listening to what I was up to, offering advice here and there and particularly giggled about the way I was trying to make something out of nothing, searching for a way to re-use items. (I remember using cooking water of potatoes and carrots as a base for soup and she told me this would help my family to survive a war. She knew! "Je zou een goede oorlogskok zijn").

I think of her when I make jellies and jams, whenever I stuff a chicken or turkey, making a ragout out of the beef used for beefbroth, making my carrotsoup (Made this soup years ago for a familygathering, everyone was initially a little weary due to the color as they were used to the vegetable or tomato soup that was usually served. Bowls were emptied, conversation resumed and she tugged my sleeve and whispered: well, it wás a nice soup but I think you should serve normal vegetable soup next time).

Oh boy, my eyes are a bit watery right now, so many little stories to share, so many happy memories. This was supposed to be a short post...
One last thing then, I finally completed a little project started some time ago, using semi-leather pants I had made (In my heart I knew I wasn't a leather pants kind-a girl but well...) and a jacket that I made (great color, nice model but entirely too stiff to wear) and used both items to make them into cushions/pillows?. Used old pillowcases and the stuffing of an old floorcushion to fill and tadaaaaa... Oma would be proud!
