Rijstevlaai / Rice pudding pie

Such a bad blogger! I promised to send or post a recipe for Rice Pudding Pie or Rijstevlaai... and I can't remember who asked me. * hangs head in shame *

I baked another one using a pie plate hence the different shape, originally a vlaai would be baked in a very large shallow and scalloped pan. And when I sat down tonight to write up the recipe I thought hey... didn't I do so already? Some time ago? I think I did!

It's right here! Yes pictured is one topped with apple slices, but the basic recipe for rice pudding pie is there. Another picture can be found here. The secret to a true rice pudding pie is the filling of soft creamy rice, flavoured with vanilla (although cardamom is really nice as well) and the finishing touch is the golden layer on top; consisting of an egg combined with sugar and whisked until very pale coloured, this is poured over the rice pudding and then baked. Like so:

  1. Ziet er heerlijk uit aan de bovenkant. Lekker goudbruin. En de binnenkant ziet er lekker smeuig uit. Yum! Wat vond je van de korst? Ik heb van Arden @ UitDeKeukenVanArden.blogspot.com geleerd dat als je maizena in het deeg doet, dat de korst er minder taai van wordt. Kga dat gauw een keer proberen.

  5. The rice pudding part being custard like and the crust being thin bread dough I understood. Now I know the best secret...the egg beaten with sugar and baked on top! Golden and lovely.

    I visited Maastricht years ago and was given some Vlaai on my first day there, it was with rice custard. The next day we had Apricot Vlaai. I so loved this and have not even tried to make it here.
    I am going to make this for my dinner tonight, thanks for posting !
