Tomato, Tomahto (recipe!)

"Pomodori Gratinati"

This is just a fun recipe! Easy to make, vegetarian, summertime favourite, bbq sidedish, along with baked rice....you name it!
You will need:
4 ripe tomatoes, sliced horiontally, place in a baking tray, cut side up
slices of mozzarella
1 tb olive oil
Combine in food processor:
4 tb fresh parsley (more like a hand full)
fresh or dried rosemary or oregano to taste
2 garlic cloves
2 slices of sundried tomato
70 gr stale bread (appr. 2 or 3 slices) slightly moistened
1 tb olive oil
1 tb balsamico vinegar
1 heaped tb capers, drained
salt & pepper


Process, use the pulse button, creating a coarse breadcrumb like texture. Spoon the mixture on top of the tomatos. You can even knead it into little balls to make this easier. Top with the mozzarella slices and drizzle with olive oil. (I used lemon scented olive oil).

Bake in a preheated oven (400F or 200C) for 30 minutes or untill the cheese is melted.

I added some chopped onions and mushrooms in between the tomatoes in the baking tray and some freshly ground pepper with the drizzle of olive oil. You can subsitute the mozzarella with parmesan and grill for the last 5 minutes of baking time. The filling can be adjusted with what you have on hand in your fridge (leeks, onions, sauteed carrots whatever...)

  2. :) Thks! Noticed I begin to figure out how my camera works? I still have to dig up the manual...
    Not a big fan of tomatoes myself (hush, don't tell) but these ones are yummy....
