Sesame Orange whole wheat coils


For 16 small rolls (approx. 50 gr dough each)

125 gr whole wheat
125 gr bread flour
2 tbs vegetable oil
300 ml water
1.1/2 ts yeast

125 gr whole wheat
125 gr bread flour
1.1/2 ts salt
1 tbs gluten
1 tbs dry milk
2 tbs toasted sesame seeds
zest of 1 orange

In the bowl of your standmixer combine all of the water, half of the flours, the yeast and oil. Mix slowly till thoroughly combined. Sprinkle the remainder of the ingredients in the bowl so it covers your mix. Let stand for approx. 20 minutes or till cracks appear in the top layer.
Mix again and watch for the dough to pull away from the bowl and make a nice smooth dough ball. Rise in a covered, oiled bowl.
After this first rise, gently deflate and shape. I made coils and knots, sprayed with water (plant sprayer) and dipped in sesame, poppy seeds, sunflower seeds and pumpkin seeds.
Second rise, covered with plastic wrap, or use your oven.
Bake for 15-20 minutes in a hot oven (250C).
