Banana cake

I'm in a seventies mood lately, made some new covers for my dinnerchairs in green, found some candles in the same colour, paired them with candles in a beautiful shade of purple.. Made a floor cushion in the same shade.. And to top it all off, there is a pile of purple fleece waiting to become a sweater. No, I won't do the legwarmer stuff! What this has to do with banana cake? Not a clue! Or it would be that in typing banana I had to think of bananarama...legwarmers, purple...
Going bananas:
2 large overripe bananas, mashed
2 eggs
1/3 cup light brown sugar
1/2 cup sugar
1 ts vanilla extract
(cinnamon/koekkruiden to taste)
1/4 cup apple sauce (I used home-made)
2 cups all purpose flour (275 gr)
1 ts baking powder
1/2 ts baking soda
1/4 ts salt
1/4 cup chocolate chips or chopped nuts

Beat eggs and sugar till light, add mashed bananas, vanilla and applesauce. Stir in sieved dry ingredients till combined.
Bake for 35-40 minutes on 375F or 180C

  2. haha, ik had hem heel stiekempjes verstopt naast de kaarsen op het kleine fotootje, nu ik het zo zie....zie je eigenlijk niets! Nou ziet een bananencake/brood er ook niet spectaculair uit hoor, een beetje als kruidkoek, maar wel lekker en een ideale manier om die bruine bananen op te maken die de kinderen laten liggen.
