Feeling Christmassy?

In my experience the days before Christmas are a hassle: sorting through your cookbooks over and over again, grocery shopping, pre-cooking, stuffing the fridge and the freezer, baking, decorating your home etc etc.
So, to lift your spirits from all the christmas shopping, sit back and relax, kick off your shoes, fix yourself a nice cup of tea and have a muffin.



Recipe:
250 gr ap flour
2 ts baking powder
1 ts baking soda
1/2 ts salt
1 ts cinnamon
3 tbs poppyseed

225 gr light muscovado sugar
3 eggs (beaten)
zest of 1 orange
225 gr carrot (grated)
115 gr melted butter
75 gr pine-apple
75 gr nuts

Sift dry ingredients, cream wet ingredients, then combine dry and wet ingredients and stir. Oven 175gr C, appr. 15 - 20 minutes.

Topping:
150 gr mascarpone
2 heaped tbs powdered sugar
zest of 1 orange

  4. Oh man. Wow. Those are my kind of muffins--piled high with frosting!

    And, and. . . (drumroll please) I could actually make these because I treated myself to a digital scale for Christmas and can now measure in grams! (It's the little things. . . ) Really, though, one morning and this scale has already changed my life. Did you know a medium orange weighs 141 grams? But I digress. . .

    I really wanted to wish you and your family a very, very Merry Christmas. And thank you for helping to make Farmgirl Fare one of the most enjoyable things I have ever done. I don't remember ever laughing so much, and it certainly would not be the same over there without you. : )

  5. Way to go FG! I'm in love with my scale ever since I discovered it weighs in grams and.. tadaa ounces! As does my King Arthur recipebook!
    (the kitchenscale is the one I'm talking about, I have an entirely different relationship with the other one in the upstairs bathroom)
